I only spent 4 years of my life in North Carolina, but it was enough to go to many pig pickins on the beach and to show me the One True Cue: Eastern NC style. 20-some years later, a close friend got married to a man from central NC and served barbecue at the rehearsal dinner. (Did I mention that at the time, they lived in Boone, NC?) She had the grace to mock those who "put ketchup on their pig". I'll eat the other stuff, but I see it the way you saw the pies at Co -- might be good eating, but it's not real barbecue.

David - I must admit, as a Yankee, when I picture the South, I always imagine it extremely hot and humid. So my Charleston experience was very fitting!

Great tip on the barbecue. From talking to folks down there (especially in SC), I get the same sense - that some of the best barbecue comes from private and catered pig pickin's. I just have yet to make the right kinds of friends!

Congrats ~ nice review and I'm sorry to see you got a chance to enjoy our 100º/100% humidity heat while you were here. I'm of the mustard vinegar school of bbq since that's how both my grandmothers prepared it. My own favorite ingredient is - http://bragg.com/products/bragg-organic-apple-cider-vinegar.html A couple folks have started up 'free foraging' hog farms around the state (like http://www.cawcawcreek.com/ )and some of the catering outfits are serving better hogs than the restaurants. It's just a matter of hitting the event they're catering for the weekend.

Chad - With that one comment, you have likely made the last year and a half blogging worthwhile. I will make a point to pass by King's as soon as I can.

I grew up in Raleigh, and am a dedicate fan of Eastern NC bbq. But, my grandfather was a pig farmer in southern VA. I spent many weeks there every summer, mostly walking through the fields of his farm looking for 8000 year-old projectile points. But, at least once a week we would also pile into the car and drive the short way up I-95 to Petersburg, and King's Barbecue. It was my grandfather's favorite. The sauce is vinegar and mustard.

I started going there in 1975 or so. Haven't been in probably 10 years, but the last time I was there nothing had changed. So, next time you're driving south on 95, check it out. http://www.kingsfamousbarbecue.com/
